Antioxidant properties: Olive oil contains polyphenols, which inhibit the cellular oxidation that produces aging and the appearance of tumours. Moreover, it can act against some types of cancer like colon and breast cancer, although this has not been proven scientifically. The oil with the highest level of polyphenols is extra virgin olive oil.
